Einkorn is the world’s oldest cultivated wheat, dating back over 10,000 years. Unlike modern wheat, which has been hybridized for high yield and gluten strength, Einkorn has remained unchanged. It is a diploid wheat, meaning it has only one set of chromosomes, making it the original grain with a clean, ancestral DNA that our bodies recognize.
