Fluffy Einkorn Sourdough Pancakes: A Traditional Breakfast
These fluffy Einkorn Sourdough Pancakes are the perfect blend of tradition and nutrition. Made with a bubbly levain from your lEinkorn sourdough starter, they deliver a light, airy texture with a wholesome depth of flavor. Whether served with real maple syrup and fresh fruit or enjoyed plain, these pancakes make every morning feel like a special occasion.
Levain Preparation (Night Before)
Ingredients:
30 grams (2 tablespoons) Stiff Einkorn Sourdough Starter
130 grams (1/2 cup + 1 tablespoon) warm (100°F) spring water
120 grams (1 cup) Einkorn all-purpose flour
Instructions:
In a bowl or a 32-ounce Mason jar, mix the Einkorn Sourdough Starter with warm spring water until well combined.
Add the Einkorn flour to the mixture and mix with a fork until fully combined, ensuring no dry spots. Cover or tighten with a lid and place in a cabinet.
Let it ferment until the levain is full of bubbles and has slightly increased in volume, usually around 7 hours in a 75°F kitchen. In a cooler kitchen (below 70°F), it may take up to 10 hours.
This makes approximately 265 grams of levain.
Pancake Ingredients:
265 grams (all of what was made) levain
2 eggs
65 grams (1/4 cup) of yogurt (optional)
1 tablespoon of olive oil
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
Ghee, olive oil, avocado oil, or coconut oil for frying
Pancake Instructions:
In a medium-sized glass bowl, whisk together the levain, eggs, yogurt, olive oil, vanilla extract, and a pinch of salt (optional) until smooth and well combined.
Whisk in the baking soda and let the batter rest for 3-5 minutes. The batter will almost double in size.
Preheat a pan over medium heat. Add about 1 tablespoon of your oil of choice to the pan.
Gently pour about 1/3 cup of batter into the pan. Cook for 2-3 minutes, or until bubbles form and start to pop on the surface. If the pancake browns too quickly, reduce the heat.
Flip the pancake and cook for an additional minute, or until golden brown.
Repeat until all the batter is used, adding more oil to the pan as needed.

Makes approximately 6 fluffy pancakes (serves 2-3 people). Double the recipe for 12 pancakes (serves 4-6 people).
