Apple Kefir Einkorn Sourdough Pancakes (Recipe)
You are going to absolutely LOVE these Apple Pancakes! These are my favorite to make for my family during apple season and they’re soooo delicious! They’re pillowy soft and the apples taste like spiced cider that you can eat!
Ingredients:
2 eggs
1 tsp of maple extract
1 tsp of vanilla extract
4 fl oz (1/2 cup) Kefir (we love raw farms!)
8 fl oz (1 cup) Whole Milk (Raw farms as well!)
180 grams (1 1/2 cup) All purpose Einkorn flour
1 tsp baking soda
1-2 apples (diced)
1/2 tsp ceylon cinnamon
1/8 tsp ground ginger
Ghee or Butter (we used caramelized ghee by belly of the sun for some dimensional flavor!)
Instructions:
1) In a large glass bowl (avoid metal to reduce interference with sourdough), Whisk in eggs into levain. Then, add in Maple extract, vanilla extract, kefir, and whole milk.
2) Sift All purpose Einkorn flour and baking soda into wet ingredients. Roughly mix till incorporated but avoid over mixing. Set batter aside (Or cover bowl and allow to cold ferment in fridge over night).
3) Set a large pan on medium heat to warm up for 4-5 minutes. Dice up apples and mix in cinnamon and ginger to coat. Add ghee or butter to pan (about 1 tbsp and more if needed) and add in spiced apples. Cook for around 5 minutes or until golden and tender.
4) Deglaze pan with water to remove any sticky sugar residue.
5) Add 1 tsp of ghee/butter to pan. Use Ladle to pour pancake batter into pan (I like to make two medium size pancakes at a time). add spiced apples onto pancakes. Flip after 2-3 minutes (or sides of pancake begin to look cooked), other side of pancake should be golden. Allow to cook for another minute, and a trick to check for doneness is to press on pancake with a little pressure with spatula, if no raw dough seeps out, then it’s done!
6) top with lots of butter, real Maple syrup, and maybe even with some extra spiced apples! Enjoy!
